Hasn't it always been like that – old or middleaged people hating the music that is popular with teenagers?
I'm not a boomer but I hate POP as well and I hate it so much.
There are only two kinds of music in the world, music you like, music you dont like. It's all music. There is nothing to argue about.
Worst Pop Song Offender is Dance Monkey. I felt like a ISIS prisoner listening to that song

1) I don't call anything after 1995 "Country Music" – It's "Country Pop Music"
2) The"sophistication in music" that started in the mid-60's ? That was was The Beatles and George Martin – 'nuff sed!
People are very possessive about their preferred music, and when that falls out of fashion and is replaced by "crap" it feels like an insult. I'm willing to bet most people in their 60s probably hate what I listen to, and I hate most music that came out after the 90's. I detest most of what I hear on the radio.
I think its all the sizzle above 17k thats just garbage noise. Too much Gullfoss!
The most recent female singer that impressed me was Zemfira (older Russian Pop/Rock?) and her music was fairly original.
The only time I don't HATE ottotune is when it's in J-Pop, K-Pop, and variations. They are using autotune more as a different sounding section of the chorus, for example. They seem more to be having fun with the whole genre instead of being so "serious".
Boomer – '57 – still listen to the Beatles, (older) Bowie, Duran Duran, KD Lang (she doesn't need autotune, yes?), Zemfira, and recently, Hatsune Miku (vocaloid) and GARNiDELiA.

Autotune is not going to age well, I'm thinking. I'm surprised it's lasted this long.

There is a lot of great contemporary music (not per se pop) like Adele, Nils Frahm, Snarky Puppy, Tool…
Yet I agree on playing on the grid sucking all the swing (= imperfection but what makes music great) and life out of it. Look behind you, a big Marshall amp, that thing is far from perfect yet we like the sound of it.
Summary: Too simple too much studio, not enough musician.
Pop music is mass produced, pump it out as fast as you can, see what resonates and make more of the same. No real talent other than an athletic on-stage performance is needed as the technology carries the bulk of the load. AI (artificial intelligence) will take over pop music creation soon, driving down the cost per song to practically zero, a price point live performers can't possibly compete with.
The last music I remember purchasing was the Smithereens and R.E.M. Directionally I can't imagine today's pop music having any long-term support/staying power or being listened to 20 to 30 years from now.

Too processed is too far out of reach.. It's not personal at all. We get tired of it, like we do with colours, then we go back to grey for a while so can can forget colour for a while. This has to happen to keep things fresh and new. Because nothing is new… Wow, that was deep!
I think the main factor is that we all forget the chaff in the charts from week to week.
The charts in the 70s there was still a lot of terrible easy listening in the early part & a lot of awful disco in the later part of the decade.
The 80s too had a lot of terrible TERRIBLE pre-fab pop. Bad ripp-off hair metal with cannon shot snares etc etc.
There a LOT more music being produced, right now more than ever before. The charts haven't reflected people's actual tastes since Napster happened. The way streaming works, with autoplay, allows labels to dominate via manipulating the system. If you push a track it'll get put into autoplay & gain listens.
Even with very niche tastes, you let a service like Spotify autoplay for too long you end up with these songs. It's almost impossible not to.
