I do enjoy the lyrics written by Hansi Kürsch, vocalist of blind guardian.
Mainly listen for some good power metal, but he writes really good adaptations of Tolkien literature into these pieces.
Artists with good lyrics from what I can think of (you already mentioned Freddie Mercury):

– Kurt Cobain (although I would say his is more abstract and not meant to have a clear meaning)

– some of Michael Jackson’s stuff
– Supertramp
– ELO
I don't think some people realize that him saying that lyrics don't matter doesn't mean that lyrics are completely irrelevant or that you can't like songs based on the lyrics. He's just saying that the lyrics aren't the music. it just isn't part of the MUSICAL argument.
also, I realize that most (if not all) the people listing artists that write their own music are mostly joking, but saying "musicians aren't lyricists" doesn't mean that musicians CAN'T also be lyricists, they just aren't as intertwined as people think they are. chefs aren't mechanics but you can sure as hell be both.

What I learnt from this video is to not question people's music taste. Unless you want to enter a never-ending argument where no one can be unanimously called the winner.
"Singers don't write lyrics" -> puts christian songs as example. Dude what?!
Pop music has only gotten 'worse' because the music industry has been getting better and better at making music that turns a higher profit. The music industry has streamlined it. Pop music is a science. It's hedonistic. For that reason, I think the music that's popular now is not an accurate representation about a generation/society.
Music should be entertainment, NOT a competition.
Pop is junk.

From what I understand the average complexity of words (in terms of length among other things) in pop songs has been going down, to a point where 6 year olds can understand a lot of pop song lyrics.

saying that poetry isn't an integral part of sung music is like saying that melody isn't.
My two favorite groups are drastically different. The oh hellos and BTS, one is a relatively unknown indie folk group the other a multimillion platinum selling Kpop recording artist. Does one being more obscure and not as flashy or the other being more popular make one better than the other, no. They both have beautifully poetic lyrics they just structure them differently, they cover different things, and to the masses one might be considered more “marketable” those who think their music tastes are inherently better simply because they listen to an artist who is less well known is nothing but pretentious bs, you can not like an artist that’s popular but then being popular doesn’t automatically make them less artistically sound. Some of the largest acts in all of music history are highly regarded as having incredible lyrics and artistry. Also it really comes down to taste, not everyone is going to like death metal(I personally can’t stand it) but they shouldn’t disregard any merit it might have. In short great video!
